- Tài liệuChemistry of Cooking(2019) Rodriguez-Velazquez, SorangelPeople around the world are fascinated about the preparation of food for eating. There are countless cooking books, TV shows, celebrity chefs and kitchen gadgets that make cooking an enjoyable activity for everyone. The chemistry of cooking course seeks to understand the science behind our most popular meals by studying the behavior of atoms and molecules present in food. This book is intended to give students a basic understanding of the chemistry involved in cooking such as caramelization, Maillard reaction, acid-base reactions, catalysis, and fermentation. Students will be able to use chemistry language to describe the process of cooking, apply chemistry knowledge to solve questions related to food, and ultimately create their own recipes.
- Tài liệuGeneral Chemistry: Principles, Patterns, and Applications(Saylor Foundation, 2011) Averill, Bruce; Eldredge, PatriciaThe overall goal of the authors with General Chemistry: Principles, Patterns, and Applications was to produce a text that introduces the students to the relevance and excitement of chemistry. Although much of first-year chemistry is taught as a service course, Bruce and Patricia feel there is no reason that the intrinsic excitement and potential of chemistry cannot be the focal point of the text and the course. So, they emphasize the positive aspects of chemistry and its relationship to students' lives, which requires bringing in applications early and often. In addition, the authors feel that many first year chemistry students have an enthusiasm for biologically and medically relevant topics, so they use an integrated approach in their text that includes explicit discussions of biological and environmental applications of chemistry. Topics relevant to materials science are also introduced to meet the more specific needs of engineering students. To facilitate integration of such material, simple organic structures, nomenclature, and reactions are introduced very early in the text, and both organic and inorganic examples are used wherever possible. This approach emphasizes the distinctions between ionic and covalent bonding, thus enhancing the students' chance of success in the organic chemistry course that traditionally follows general chemistry. Finally, the authors made a conscious effort to treat material that has traditionally been relegated to boxes, and thus perhaps perceived as peripheral by the students, by incorporating it into the text to serve as a learning tool.
- Tài liệuIntroductory Chemistry - 1st(BCcampus, 2014) Ball, David W.; Key, Jessie A.The goal of this textbook is not to make you an expert. True expertise in any field is a years-long endeavor. Here I will survey some of the basic topics of chemistry. This survey should give you enough knowledge to appreciate the impact of chemistry in everyday life and, if necessary, prepare you for additional instruction in chemistry.
- Tài liệuLaboratory Manual: General Chemistry I Honors(2023) Adeyiga, Adedoyin M.General Chemistry I Honors Laboratory Manual (2023) is an eTextbook designed to provide a practical, hands-on approach to learning chemistry for students taking General Chemistry I Honors courses. The manual covers fundamental principles of chemistry, including atomic structure, chemical bonding, stoichiometry, gas laws, and thermodynamics. The book is divided into chapters, each focusing on a specific topic. Each experiment in the manual is accompanied by step-by-step instructions, pre-lab questions, and post-lab questions, helping students to develop their analytical and problem-solving skills.
- Tài liệuThermodynamics and Chemistry - Second Edition(Howard DeVoe, 2019) DeVoe, HowardThermodynamics and Chemistry is designed primarily as a textbook for a one-semester course in classical chemical thermodynamics at the graduate or undergraduate level. It can also serve as a supplementary text and thermodynamics reference source.
